This article explains how the Server Uptime (System > System Information) value is passed, and when it is actually reset.

Functionality
Server Uptime reflects the duration from when the entire AWS EC2 instance (machine) was last rebooted. It only resets when the instance is stopped and started from AWS, restarting JM services does not affect this value.
